Zarda Recipe
Ingredient:
- Water 8-10 cups
- Salt ½ tsp
- Water ¼ cup
- Zarda meals color 2tsp
- Zuraiz Sella 1121 Rice (sella) 1 & ½ cup (soaked for 4 hours)
- Ghee ½ cup (Ideally desi ghee)
- Green cardamom 3-4
- Cloves 3-4
- Sugar ¾ cup or to taste
- Kewra essence 1tsp
For adornment:
- Ashrafiyan
- Dry fruits/nuts
- Pheeka khoya
Instructions:
In a pot, upload water, convey it to a boil.
Add salt. Dissolve zarda meals color within the water, add it to the pot and blend well.
Add rice and convey it to boil, prepare dinner until rice is done.
Pressure rice and put it aside.
In a separate pot, add ghee, green cardamom, and cloves, saute for a minute.
Add boil rice, sugar. Cover and prepare dinner until sugar totally dissolves (approx.10-15 minutes) on medium-low flame.
Place a griddle on the stove and put back pot over a griddle.
Put it on simmer for 10 mins.
Add kewra essence,ashrafiyan,pheeka khoya,dry fruits/nuts.
Cover and steam cook for 10 minutes.
Zarda is ready, add gulab jamun and chum chum for garnishing.
